Eduardo Armero Martinez is a skilled producer from Nariño who has successfully expanded his expertise into the Huila region at his six-hectare farm, El Mirador. Armero manages a sophisticated operation in the municipality of La Argentina, producing roughly 100 bags of coffee annually. The farm sits at an elevation of 1,700 meters and utilizes a strategic shade canopy over 20% of the land. Production is split between a primary harvest from May to August and a secondary "mitaca" crop between October and January, with a strict focus on harvesting only the most mature cherries to ensure peak quality.
This specific lot features the highly sought-after Pink Bourbon varietal, processed with meticulous attention to detail. The coffee undergoes a two-stage fermentation process, starting with 24 hours in the cherry followed by an additional 36 hours in mucilage. After being thoroughly washed, the beans are sun-dried on patios for 15 days. This traditional yet precise processing method, combined with Huila’s unique microclimate, has already garnered significant industry attention for Armero's relatively new project.
