Sourced from a Chimaltenango, Guatemala farmers co-op, these beans are an assortment of local varieties. They are processed as whole cherries, ensuring better control and lot grading at the mill. The result in one of the most balanced, cleanest cups we have had the pleasure of pouring recently. 

Typical with our practice, we preferred the light roasts over the medium and darker samples. We feel that this gave the best balance to the coffee with aromas of faint brown sugar, chocolate, and nuts. The taste is exceptionally uniform and balanced with the flavor profiles falling in line with initial aroma.
