Managed by Azeb Tadesse at the Worka mill in Chelchele, the coffee undergoes an intensive regimen of repeated hand-sorting to ensure a flawlessly clean profile rarely seen in dry-processed beans. By drying the whole cherry on raised beds at high altitudes, the traditional Ethiopian method infuses the seeds with a refined sweetness and a juicy, creamy mouthfeel without any of the earthy or fermented notes often associated with naturals.
